Individual Mini Carrot Cakes
Impress friends and family with these delicious individual cakes.  They also make a tasty  Easter Treat.

Ingredients  - makes around 12 mini cakes
150g self raising flour
1 teaspoon baking powder
1/4 teaspoon cinnamon
125g butter
125g brown sugar
75g grated carrot
2 eggs
100g full fat cream cheese
2 tbsp icing sugar
Walnut crumbs (to decorate)
Green food coloring (to decorate each cake with carrot leaves)
Orange food coloring (to decorate each cake with carrot)
2 small plastic food bags (to use as pipe bags to decorate each cake)

preheat oven to 180 (gas4). put 12 paper cases into a bun tin. Sieve the flour, baking powder and cinnamon into a large bowl, and add the butter, brown sugar carrot and the eggs. Beat together with a wooden spoon until well mixed.

divide the mixture between the cases and bake for 20-25 mins until they spring back when pressed. transfer cakes to a wire cooling rack leave until cold.

For the icing, mix the cream cheese with the icing sugar in a bowl then spread on the cakes.

Decorate each cake.
